1. Marinate the beef with black pepper, salt and minced garlic. Refrigerate for six hours while packed in a sealed polythene bag before cooking. Marinating ensures that all the flavors are well absorbed. The beef will first be browned in the pan and not cooking it completely then set aside.

2. On medium heat, heat a pan and add the vegetable oil, butter, bay leaves, spring thyme, onions, carrots and salt to taste. Cover for about ten minutes and let them simmer. Simmering lets the vegetables soften, and some will be crunchy.

3. At this point add the all-purpose flour and mix in thoroughly to mix well in the food. Add the tomato puree, soy sauce, Worcestershire sauce, beef stock. Stir to incorporate all the flavors into the meal. Adjust seasoning as required.

4. Add in the pre-cooked beef and let it simmer for 4 – 7 minutes. Place the cooking ingredients in a casserole dish and cover.

5. In a preheated oven,(preheat oven to 220 degrees) place the casserole dish and let the food cook for approximately 2 hours after which you will uncover to let it cook for another 30 – 40 minutes in the oven. This will make the sauce thick and allow the meat to be tender and evenly cooked.

  • Fish stock
  • Butter
  • All-purpose wheat flour
  • Spring onions
  • 6 Hard boiled eggs
  • Boiled potatoes
  • Fish fillets
  • Minced garlic
  • Lemon zest
  • Sea salt
  • Black pepper
  • 300 ml boiled milk


1. Add fish stock, milk, flour, melted butter to prepare the sauce. On low heat, heat the pan and cook the ingredients. Keep stirring the ingredients of the source to consistency. This also avoids the sauce from sticking to the pan.

2. On a different bowl, cube the fillets keenly removing any bones that might be left then marinate with garlic, black pepper and sea salt and lemon zest for about five to ten minutes. Fish fillets take a shorter time to marinate because of its tender nature.

3. Add the marinated cubed fillets into the sauce ant let it simmer on low heat for approximately ten minutes. This is to prevent the tender fillets from crumbling in the sauce.

4. In a separate dish mash the pre-boiled potatoes. The potatoes can be cooked with skin on or with the skin peeled.

5. Caramelize the spring onions slightly and set aside.

6. In a casserole dish, place the sauce with the fish fillets followed by the spring onions sprinkled evenly onto the sauce. Slice the pre-boiled eggs into two halves and layer them onto the onions which will be halfway submerged into the sauce.

7. Sprinkle any cheese which may be cheddar, parmesan or any other of your choice onto the eggs. This will help bind the ingredients together once it is melted. The potato mash will be used to cover the ingredients evenly.

8. Eggs wash the potato mash which will give an appealing appearance once the meal is thoroughly cooked in the oven. You can create a pattern using kitchen stencils or a fork on the potato mash.

9. Reheat your oven to 200 degrees and place the dish in the oven for about 15 – 20 minutes. This takes a shorter time since most of the ingredients were precooked.

10. Ready to serve when gotten from the oven. Serve with desired accompaniment.
